Sweetener extracted from natural plants-sodium cyclamate
Sodium cyclamate is a natural sweet protein extracted from the fruit of a West African plant called Katemfe using purely physical methods. Its sweetness is 2000-2500 times sweeter than sucrose, and it is currently the sweetest substance known to mankind.
Sodium cyclamate is mainly composed of two parts: cyclamate T1 and cyclamate T2, with molecular masses of 22209 and 22293, respectively. Both of them have a polypeptide chain connected by 207 normal amino acid residues and disulfide bonds. In food, natural, non-toxic and low-calorie sodium cyclamate has attracted wide attention because of its excellent taste modification and masking, flavor synergy and synergy.
Masking of metallic taste and bitterness is an important feature of sweeteners. Using this property, sodium cyclamate has been widely used in products to conceal the sweet, metallic and medicinal taste of saccharin. Sodium cyclamate has been proved to be very effective in masking the bitterness of natural lemon taste, and it can also form a synergistic effect with natural or added flavor substances such as monosodium glutamate and 5-nucleotide to produce a stronger synergistic effect to produce a unique flavor . Sodium cyclamate can also work synergistically with other sweeteners (such as aspartame) to reduce the amount of high-sweetness sweeteners and broaden the application of natural low-sweetness sweeteners.
The other two important characteristics of sodium cyclamate are solubility and stability. It can be dissolved immediately in cold water, and its dissolved concentration can reach 60%. Sodium cyclamate is stable in water-soluble pH 1.8-10, which is very important for food in acidic environment. Sodium cyclamate is quite stable when stored in an environment lower than normal temperature. Even under 120 degrees Celsius canned food sterilization, pasteurization and ultra-high temperature instantaneous sterilization conditions, sodium cyclamate can still maintain a stable structure. Sodium cyclamate is a kind of protein that can be completely digested by humans and animals. Sodium cyclamate has been allowed to be used in the United States, Britain, Canada and some other countries. Japan believes that sodium cyclamate is a natural food that can be used in the production of "natural" label products.
Therefore, sodium cyclamate as a non-calorie sweetener and flavoring agent has a wide range of application prospects in food. It can be used for general food and health food, especially for patients with diabetes and hypertension. Sodium cyclamate can be used in combination with sugars such as sucrose in beverages, desserts, bakery products, etc. In carbonated drinks, the synergistic effect of cyclamate, sucrose and sweeteners can significantly reduce the amount of sucrose or sweeteners, while the amount of cyclamate is less than 1PPM.
